Bacon can actually be difficult to grill; it’s high in fat, which is a primary cause of flare-ups, and the narrow strips have a tendency to slip between grill grates. To tackle the first issue, we’ve designed a reservoir on each side of the rack so the grease stays where it needs to be: away from the fire. Plus, bacon fat is one of the most flavorful fats you can use to cook with. Simply empty out the each side of the rack and refrigerate the fat for the next time you cook.
