Baby Back Ribs

There aren’t very many recipes that taste better than fall off the bone baby back ribs smothered in delicious sauce.

Ingredients:

  • 2 slabs baby back ribs
  • 1/4 C. onion powder
  • 1/4 C. garlic powder
  • 1/4 C. chipotle chili powder
  • 1/4 C. ancho chili powder
  • 1/2 – 1 tsp. cayenne pepper
  • 2 Tbsp. coffee grounds, finely ground
  • 2 Tbsp. unsweetened cocoa powder
  • 1/4 C. brown sugar
  • 1/4 C. kosher salt
  • 1 jar of barbecue sauce (We recommend Steven Raichlen Best of Barbecue™ Chipotle Molasses)

Instructions:

  1. Remove membrane from the ribs
  2. Combine all dry ingredients and proceed to massage into ribs.
  3. Brush ribs with olive oil and sear over high heat.
  4. Turn heat to medium and cook over indirect heat at 225 for 2.5-3 hours. (Consider using the Charcoal Companion® Space Saver™ Rib Rack to maximize grill space. Add a V-shaped Smoker Box to enhance ribs with a smoky, rich flavor. If using a smoker box, start with 4 oz. of wood chips or pellets. Once the initial 4 oz. has burned off, refill with another 4 oz.)
  5. To check ribs for doneness, pick them up with tongs. If the ribs crack when they bend, they’re ready. Just before removing the ribs from the grill, baste liberally with barbecue sauce and allow to carmelize.
  6. Remove the ribs from the grill and slice between the bones and serve with additional barbecue sauce.
